Black Toscana (Brassica oleracea acephala) is the classic Italian kale, sold in some places as Tuscan or Dinosaur kale, with long dark green leaves in a deep crinkled texture. It is one of the easiest vegetables to raise from seed, and picked leaf by leaf it will feed a household for months from one sowing. This listing is a seed packet, not a seedling.

What it does

  • Cut and come again. Take the outer leaves and the plant keeps pushing new ones from the centre, so a short row stays productive for months.
  • Cold hardy. It tolerates frost, and the flavour improves as the weather cools, which is the opposite of how most leafy crops behave.
  • Rich, earthy flavour. The leaves hold their texture through soups, roasting and pan frying rather than collapsing like softer greens.

How to use it

Sow into fertile, well drained soil in full sun. Cover the seed shallowly, firm the surface and keep it damp until the seedlings appear. Space the plants 40 to 50cm apart to let them reach full size. Closer spacing produces smaller, more tender leaves, so a few extra plants lift the total harvest.

It can be sown year round, with autumn and spring the strongest seasons. The first leaves are ready to pick in 6 to 8 weeks, and harvesting continues from there for months. Leave the growing point alone, water steadily rather than in bursts, and the plant keeps replacing what you remove.
