Italian Purple Garlic (Allium sativum) is a classic culinary variety grown for its strong, rich flavour and its large, well formed cloves. Supplied as bulbs for planting rather than seed, it performs reliably across a range of Australian climates and stores well after harvest when cured properly. It suits home gardeners who cook with garlic often enough to give a bed over to it.

What it does

  • Bold flavour for cooking. This is a full strength garlic, suited to roasting and to dishes where garlic is meant to be tasted rather than hinted at.
  • Large, easy cloves. Well formed cloves are quicker to peel and prepare, which matters when you are working through a season's harvest.
  • Keeps after harvest. Cured correctly it stores well, so a single planting supplies the kitchen for months rather than being used up at once.
  • Undemanding in the ground. It grows best without mulching or added fertiliser, so there is no feeding routine to maintain once it is planted.

How to use it

Break the bulb apart and plant the individual cloves, not the whole bulb. Set each clove pointed end up and space them 10 to 15cm apart. Closer spacing works and gives a denser planting, so order extra bulbs if you are aiming for a bigger yield from the same bed.

It can go in year round, but autumn is the best season by a clear margin. Choose a position in full sun with well drained soil. It does not need mulching or fertiliser to produce quality bulbs. Expect roughly six to eight months from planting to harvest, and lift the bulbs once the lower leaves start to yellow and dry off.
