Purple Sprouting is the broccoli that earns its space in winter. Brassica oleracea 'Purple Sprouting' does not build one large head. It stands through the cold and then sends up dozens of slender purple shoots over several weeks, arriving in late winter and early spring when little else is producing.

What it does

  • Crops when nothing else does. Shoots come through from late winter into early spring, filling the gap between autumn and spring crops.
  • Handles the cold. A cold hardy variety that grows on through winter. Frost does not damage it, and improves the flavour of the shoots.
  • A long picking window. Rather than one cut, it produces side shoots over several weeks, and the more often you pick the longer it runs.
  • Low input. It crops well without mulching or fertilising, which matters for a plant holding a bed all season.

How to use it

Plant into fertile, well drained soil with good sun, spacing plants 50 to 60cm apart. The wider spacing is deliberate: these plants get large, stay in the ground for months, and need airflow through damp winter weather. Plant several for a real supply, because each gives a handful of shoots at a time.

It can be planted year round, but late summer into autumn is the season that works, giving the plant time to build size before the shoots come. Pick the shoots young, while the buds are tight and closed, and cut regularly: consistent picking keeps new ones coming.
